Last week my workplace asked us to bake something at home and bring it into work on Friday. As I’m dairy free, I was really struggling for something yummy that I could make at late notice. These are so simple and fast to make, whilst tasting absolutely delicious!
Ingredients
- One pack of dairy free biscuits/digestive biscuits
- 100g dairy free butter
- 150g dairy free chocolate
- 100g mini marshmallows
- One oven tray/flat surface
- Parchment paper
- Sprinkles (I chose pink ones)
Instructions
- Place dairy free digestives/biscuits in a bag and crush them
- Melt the butter and dairy free chocolate for 30 seconds using a microwave
- Remove from the microwave, add the crushed biscuits and marshmallows then stir together until everything is coated in the chocolate mixture
- Put on a oven tray/flat surface covered with a sheet of parchment paper and spread the mixture evenly
- Cover lightly with the pink sprinkles
- Refridgerate until hard (Usually 30 minutes+)
- Remove from fridge and cut into pieces
- Serve and enjoy!
Notes
- Makes approx 12 yummy squares of dairy free rocky road
- The ingredient amounts are to my personal taste, you can alter them if you prefer
- Top tip: Supermarket own brand biscuits usually don’t contain dairy – always check though!
