
These pancakes are really easy, mainly because they have only TWO main ingredients. You can adapt the recipe by adding different ingredients such as cinnamon or chocolate chips.
1 banana, mashed (should be around 1/3 to 1/2 cup when mashed)
2 eggs
Method
Peel and mash the banana.
Then stir in the eggs. Also mix in any non-chunky add ins that you want (e.g. baking powder)
Next, heat a non-stick pan and lightly spray with oil. I used sunflower oil, but it’s personal choice. Turn the heat down to medium-low.
Pour a circle of batter into the pan.
Cook until golden brown on the underside (around 1 minute), then sprinkle on any chunky ingredients (e.g. chocolate chips), then use a spatula to flip and cook until golden brown on the other side.
Serve warm with anything you fancy. I like strawberries!
